Having powering up the my new Link Start H68K router what should I do to access its GUI?
It has 4GB of RAM and 32GB of eMMC. It says it was pre-installed with Android 11.

Suggest you refer to the following thread:
If you wish to use it, as is, out of the box, you need a 12v power source, and I suggest a wired keyboard, mouse, and monitor. This will get you access to the preinstalled Android build.
