What library did you use?
What wiring scheme for the load-cell?
I’ve been going around in circles for a couple of days trying to get this to work 
I have a load cell (50kg limit bar) connected to HX711
- red ::> E+
- black ::> E-
- white ::> A+
- green ::> A-
HX711 is connected to XIAO:
- VCC ::> 3.3v
- GND ::> GND
- DT ::> PIN_A2
- SCK ::> PIN_A3
