Can I use one Li-on 18650 (3.7V) battery to power the board SEEEDUINO XIAO?
Should I use Vin pin our is possible to bypass the regulator and use some 3V3 pin?

I would say, It is suitable for xiao by using VIN to support power via Li-on 18650 (3.7V) battery.
I would be a little cautious. A fully charged 18650 can reach around 4 volts.
