I want to start learning how to use Arduino and have the book ‘Beginning Arduino’ by Michael McRoberts. I now need the supplies such as Arduino board, LEDs, etc. I only want a genuine Arduino board; no Seeeduino or any of the other knock-offs. I seen some kits like MAKE Arduino Starter Kit for $64.99 but doesn’t seem to come with much supplies wise, especially for the price. Also, heard it might be better to start with an Arduino Mega 2560 board instead of an Uno so that I don’t have to worry about what projects I can or can not handle on an Uno and would have to buy a better one. What should I be buying so I can get started and not have to buy something every other day to do projects? Also, best places for best prices to get them. Any info is helpful.

If you are a beginner, I recommend you try the beginner KIT for Arduino first, it just cost $19.9, and there are 10 modules with the guide.
Also, you are able to try Seeeduino XIAO, Seeeduino XIAO is not knock-offs, it is the smallest powerful Arduino, you can buy a Seeeduino XIAO expansion board with it to do expand the function.
If you want to challenge harder, you could try WioTerminal , it build-in WIFI&BLE, and gyro etc, it also has the tutorial.

You’re in the wrong place to learn about Arduino.
The best place for projects and supplies with respect to Arduino is Adafruit in New York City.

I have 5 or 6 Arduinos and I can tell you the Uno has plenty of power for quite a few projects you can pursue (I’d say at least 60 projects, but probably more).
One of the things to keep in mind is these days, the use of 3.3v logic as opposed to 5v is very prevalent, so if you don’t want to get involved in level shifting, you need to consider Arduino “knock offs”, as you call them, since some have a switch so you can choose the logic levels you want.
The one I use is called “Infiduino UNO R3” – Google it. P.S. I don’t think Adafruit sells the Infiduino. Also; be sure to read this: https://forum.arduino.cc/index.php?topic=414228.0
