I’m hoping to add some peripherals such as some sensors to the microcontroller thats on the respeaker lite if its possible.

Yes. That is the correct one.
if you want to add sensors i would say you would want to connect to the IIC bus and add IIC sensors or connect a daughter board to the connector on the XIAO ESP32S3
