I want order PCB without silk screen. It possible? How to mention it for order?

I would suspect that if the gerber file for the solder mask (or the silk screen) does not have anything defined you will not get that on the board. Computers are suprisingly good and doing what they are told, if you tell them not do to something then they will not do it.
