Why does this product not use IIC? Expose the IIC pins?

would not IIC be better for XIAO because it needs dedicated GroOve Port and IIC can be multiplexed port?

Could product be revised to expose IIC or make selectable?

Also can a product be made for XIAO add on expansion board
