I am now designing a FPGA project using a GSR as analog input.
Although I know there are some Pmod ADC converter to convert analog signal the zedboard , the manual of GSR does not say it is compatible with FPGA . So is this possible that I can still use GSR with ADC on the zedboard to work on a FPGA project?

Why not? The GSR module output simple Analog signal. You just need to write the ADC program for FPGA yourself then it can work.
